INSOYCUT: Innovation of Tofu Cutting Machine from ITK to Support Local Industries

The Research and Community Service Institution (LPPM) of the Kalimantan Institute of Technology (ITK) has once again made a breakthrough. Through a research project titled INSOYCUT, the ITK research team has successfully developed a hydraulic-based tofu cutting machine designed to address the challenges faced by tofu producers in improving production efficiency and product quality.

A Solution for Tofu Producers' Challenges

The tofu industry is one of the key pillars in Indonesia's traditional food sector. However, the manual production methods often pose significant challenges. The manual tofu cutting process is time-consuming, labor-intensive, and results in inconsistent output. Recognizing this need, the ITK research team has introduced INSOYCUT as an innovative solution to address these problems.

Advantages of INSOYCUT

INSOYCUT offers various standout features that make it an efficient and modern tofu cutting machine:

  1. Time and Energy Efficiency
    The hydraulic technology enables faster cutting compared to manual methods, helping producers save both time and energy.
  2. Consistent Cutting Size
    Each tofu cut by INSOYCUT is uniform in size, improving the aesthetic quality of the product and increasing consumer confidence.
  3. Ease of Operation
    With an ergonomic design, this machine is easy to operate by anyone, even workers without specialized technical skills.

    INSOYCUT can process tofu in large quantities, making it an ideal solution for medium to large-scale producers.

    The prototype of this tool was designed through cross-disciplinary collaboration between mechanical engineering and product design. The materials used also meet hygienic standards, ensuring that the tofu produced remains safe for consumption.

Future Expectations

With the introduction of INSOYCUT, the local tofu industry, especially in East Kalimantan, is expected to become more competitive in both national and international markets. Furthermore, the ITK research team is also working on developing a more affordable and portable version, making it accessible for small-scale tofu producers.
